# Expert Advice:

01 -
  • The charred, golden edges of the halloumi add an irresistible savory note that perfectly contrasts the cool, juicy watermelon.
  • Threading everything onto skewers feels like assembling edible little art projects—unexpectedly fun, especially with friends around the table.
02 -
  • Halloumi melts fast if the grill’s too hot—I lost a whole batch to enthusiastic flames early on, so keep a close watch.
  • Letting the cheese and onion soak in the marinade for even ten minutes really does make every bite more flavorful and less squeaky.
03 -
  • Always oil your grill grates well—halloumi is sticky business when it hits hot metal.
  • A tiny squeeze of lemon right after grilling quietly ties all the flavors together.
